We had not had pudding for a while. So, I decided to make some pudding in my new steamer for dessert. Here is the recipe:
Ingredients
50g softened butter
140g of cooking chocolate
3 egg whites
2 egg yolks
40g caster sugar
40g plain flour
Method
Heat the butter in the thermomix jug for 3 mins, 90 degrees Celsius at speed 2 until the butter is melted.
Once the butter is melted add in the broken pieces of cooking chocolate and blitz at speed 20 seconds at speed 9. Then, scrape down and melt at 4 minutes at 37 degrees Celsius at speed 2 and stir for 5 minutes at 90 degrees Celsius at speed 3 until it is melted and mixed well with the butter.
Next, I beat my egg whites with an electric hand mixer until stiff peaks formed.
In a separate bowl beat the egg yolks and sugar and add the flour and mix it well.
Subsequently, fold in the chocolate mixture followed with one-third of the egg whites, and then gently fold in the remaining egg whites.
Finally, pour the chocolate batter in a steam proof bowl and steam it for 30 minutes. Garnish it with caramel sauce and chocolate sauce. It’s delicious!
