I love my sambal ikan bilis. Ikan bilis means anchovies and sambal is a kind of oriental hot relish made with vegetables or fruit and spices. But I do not want to make it too spicy so that my kids can enjoy it too. This hot relish goes very well with nasi lemak, which is a fragrant steamed rice cooked with coconut milk and pandan leaf.
Ingredients:
20g soaked dried chillies
2 tomatoes
15g garlic
50g shallots
150g brown onion
1/2 tbsp of tamarind puree
2 tsp belachan – shrimp paste which you can get it from oriental grocery shop or Woolworths and Coles in Australia.
50g cooking oil
50g sugar
100g ikan bilis
Salt to taste
Methods:
Place the dried chillies, tomatoes, garlic, shallots, belachan into the thermomix bowl and blitz it for 1 minute at speed 9. If you want it to be spicier, you can add more soaked dried chillies.
Then add 100g water and cook for 10 minutes at varoma speed 2.
Next add the oil, salt, sugar, ikan bilis, tamarind puree and brown onion and cook them for 5 minutes at varoma speed 2.
