My son attempted to bake some shortbread cookies and it was really delicious. He added in some chocolate chips because he loves chocolates.
Ingredients:
90g of sugar
40g of cornflour
210g of butter
250g plain flour
A drop of vanilla essence
A handful of baking chocolate chips
Methods:
Blitz the sugar in the thermomix until it turns into powdery for 10 seconds on speed 9.
Then add plain flour, corn flour and butter. MIx them well for 15 to 25 seconds on speed 6.
After that knead for a minute Just make sure you stand close to your thermomix during the kneading process because it may dance around on the bench top and fall off the bench top.
Turn out dough onto a pastry mat and shape it into a long square log and cover with plastic wrap and place it in the fridge for 20 minutes to rest.
After 20 minutes take the shortbread square log out from the fridge and cut them into a rectangle and my son decorated the rectangle log with baking chocolate chips.
Finally, bake them in the oven for 15 to 20 minutes until they are golden brown.
