Nasi lemak is my family favourite type of rice. It is cooked in coconut milk with pandan leaves which you can find in an oriental grocery shop and they are sold frozen. I will cook it in my Buffalo Smart Cooker.
Ingredients:
3 cups rinsed brown rice
3 cups of water
1 cup of coconut milk
3 pieces of pandan leaves tied into a knob
a pinch of salt
50g chopped red shallots
1 small knob of ginger
Methods:
Place all the ingredients above in the buffalo smart cooker or any rice cooker.
